Others default icons that are added to the taskbar in Windows 11 can not easily removed simply by right-clicking and unpinning. For those you will have to use the Windows Settings app to hide these icons.
For the Microsoft Store app icon, you can not hide it using the Windows Settings app. For that, you can just right-click on the icon and select “Unpin from taskbar“

How to hide the Microsoft Store icon from taskbar in Windows 11
As mentioned above, you can’t hide the Microsoft Store app icon from the taskbar in Windows 11. You can only remove it by unpinning.
Here’s how to do it.
While logged to your Windows desktop, right-click on the Store app icon on the Taskbar. Then select “Unpin from taskbar” as shown below.
Alternatively, you can also unpin the Store app icon from the Taskbar as well as Start menu. Click on the Start button, then right-click the Store app icon in the Start menu and select Unpin from taskbar and Unpin from Start as shown below.

That should do it!
