Next, click on Appearance on the left menu.

On the Settings -> Appearance settings pane, under the Customize browser section, toggle the button on the tile that says “Use double-click to close browser tab” to On or Off.

If off, Edge the browser tabs will not close when you double-click. If enabled, the browser tabs will close when you double-click.

Alternatively, users can use the Windows registry to turn on or off double-click to close browser tabs in Microsoft Edge.
Open the Windows Registry, and navigate to the folder key path as listed below.

If you don’t see the Edge folder key, right-click on the Microsoft parent key, then create the subkey (Edge) folder.

On the right pane of the Edge folder key, right-click and select New -> DWORD (32-bit) Value. Type an item named DoubleClickCloseTabEnabled.
Double-click the new item name (DoubleClickCloseTabEnabled) and enter the Value data of 1 to enable double-click to close a browser tab.
A Value data of 0 will disable double-click to close a browser tab.

That should do it. Restart your computer for the changes to apply.
